The importance of immigrant cuisine in today’s food described in his book was a great influence on me when I was working on my book. He tackles the question of “authenticity” in immigrant cooking. He says that authentic is not the correct word. Immigrant food is “frozen in time,” reflecting the culinary moment when the immigrants left their homes. I love Edward Lee’s book as it captures the complexity of American cuisine.
