Beet and Ricotta Dip
Yield: 4 servings
- Preheat oven to 400°F (200°C).
- Wrap each beet in a piece of aluminum foil and place it on a rimmed baking sheet. Transfer into the oven and roast until the beets are tender when pierced with a knife, around 35 to 40 minutes.
- Allow beets to cool slightly and peel under running water.
- Transfer beet into the bowl of a food processor and add the ricotta, lemon juice, sumac, and a large pinch of salt and pepper. Process until a smooth and creaming dip forms. If needed, you can add a splash of water to adjust the consistency.
- Taste and adjust the seasoning and place the dip into a serving dish. Garnish with fresh mind and serve.

1) I will not fast unless it is for religious reasons.
2) I will not cut out foods or categorize foods as "good" or "bad." For me, moralizing food is dangerous, and I want no part of that.
3) I will focus on going s l o w. I have heart issues, and losing weight too fast could make those issues worse.
My main problem, though, has been figuring out how on earth to get enough protein and fiber in a day (I don't calorie count; I focus on protein and fiber because my diet is deficient in those), and that's when my sweet friend @jewishfoodhero reached out and said she understood the issue I was facing and did I want to check out her new project. HECK YES, I wanted to check it out!
Kosher Macros by Kenden Alfond is a brilliant guide to learning how to balance your plate with your favorite foods without losing vital nutritional things (like protein and fiber, for me). Her recipes are kosher (this matters to me!), easy to make, incredibly delicious, and none of the ingredients require specialty markets, which I truly appreciate.
The best part is that Alfond breaks down the science of balanced eating in such simple terms that it makes counting macros incredibly easy for me (I struggle with this HARD). She even includes worksheets and quick-glance information in the back to help individualize meal planning so that none of this needs to be more complicated than choosing fun recipes to try.
Since I started playing with the recipes and worksheets, the weight has started coming off more consistently, but the best part is I am getting all the protein and fiber that my doctor told me I need to get each day.

I received this as a gift from a friend and I am so glad because it’s a great addition to my kitchen. I do not keep a kosher kitchen and it doesn’t matter!!! I have tried 3 different recipes so far and love them all!
