Makes 4 servings
4 bratwursts
1 cup sliced shiitake mushrooms
½ cup coarsely chopped onion
8 garlic cloves, minced
2 cups chopped red cabbage
4 cups chopped mustard greens
½ cup chopped fresh oregano
2 tbsp ghee
Sriracha or spicy kimchi to taste
TO MAKE: Boil the brats for 10 minutes, then slice them. Heat the ghee in a large skillet or stockpot over medium-high heat. Add the mushrooms, onion, and sliced brats and sauce until the mushrooms are soft and the onions are translucent, 2 to 5 minutes. Add garlic and cook, stirring for 2 minutes. Add the cabbage and cook for 5 minutes more. Remove from the heat and stir in the mustard greens and oregano. Cover and let skillet sit for 2 minutes.
Serve with sriracha or spicy kimchi for an extra kick.

Terry L. Wahls, M.D. is a clinical professor of medicine at the University of Iowa Carver College of Medicine in Iowa City. In addition she is a clinical researcher, studying the use of diet and lifestyle interventions in autoimmune and other chronic disease states. When I read Dr. Wahls first book, The Wahls Protocol, some years ago I was daunted by the cornerstone requirements of eating 9 cups of vegetables and fruits in a specific variety, and eliminating dairy, gluten, and eggs, so I did not attempt it. Then more recently, re-reading to see if I might after all use the protocol to deal with severe and chronic pain, I again thought it would be too complex, time-consuming, and expensive. Having this cookbook resource, I now find that none of these concerns are the case!
Dr. Wahls is very sensitive to how much energy, time, and money people with MS and other disabilities have, and the day-to-day plan is easy to follow. It does involve possibly more grocery shopping that one is used to (likely shopping for very different things) and a few items, like coconut oil, are on the pricey side. But the trade-off on not buying ultra-processed packaged foods, dairy, and gluten products will help to balance that out.
The presentation of each of the 3 stages of the Wahls Protocol (the basic Wahls diet, Wahls Paleo, and Wahls PaleoPlus, which is essentially a keto diet) is succinct and easy to follow. You're also encouraged to ramp up slowly, no need to face eating all 9 cups of vegetables and fruits right off the bat (although she strongly recommends going cold turkey on dairy and gluten, which I did find to be a good strategy). Then, each section of suggested meals--smoothies, soups, skillet dinners, salads, etc.--begins with a "template" to follow using your own on-hand ingredients, followed by numerous recipes that she and her family enjoy. I have not seen one that I don't want to try out at some point.
Beyond that, one of the most beautiful cookbooks I have ever seen! Photography is fantastic, and layout is very easy to read. I purchased the paperback, but think I will use this often enough that I want to spring for the spiral-bound edition as well.

As a stress eater, Keeping a book like this around motivates me to eat healthy. I get ideas by looking into these recipes. I’d say this book is incredible if you follow her diet… there’s recipes for breakfast, lunch, snacks, smoothies, teas, soups, dinners. I tweak the recipes to what I have at home that aligns with the diet and it tastes good. They are simple as well, at least most are.
My favorite is the raw cheese. I add to my pasta, salads, soup, eat with snacks. I refill my box every week.
Nut rounds, a blended mix of various fruits, nuts to snack on instead of store bought bars.
And chocolate pudding is also my favourite. But I haven’t added cream to it. She suggests eating a lot of coconut cream and berries.
I also suggest buying her other book called wahls protocol. I have read it a few times and changed my diet. Every time I need to get back on the bandwagon, I read. I bought her book in 2015 Jan or Feb, and watched her Ted talk as well.
